The Specialty Coffee Association (SCA) defines a specialty coffee as a green coffee of high quality, roasted so as to bring out the best of justify aromatic potential. This potential is then extracted to reveal a distinctive identity according to a precise method guaranteed by the professionalism of the barista.
The distinction of “specialty” is assigned to coffees which attain a score of at least 80 points on the assessment form used in the SCA Cupping Protocol (Brazilian tasting method).
